The aroma of cardamom, reminiscent of cups of chai masala tea brewing, is the India I remember, especially the spice gardens in Kerala. Chai tea is best made with a tea bag, a cardamom pod and heated milk—a treat for visitors and friends at Christmas.

Cardamom, the small oval seed pod of a ginger-like plant, has a special meaning to me, as it was the spice used in all our Christmas cakes. The ritual of Christmas baking began a month beforehand. Spices were assembled; dried fruits and candied cherries were chopped on boards over newspapers spread on the floor. We had a team of friends who came over to help. The spices were then ground, and the time-consuming task of separating the cardamom seeds from the pods was often assigned to the most important person, my mother, who would arrive regally accompanied by bottles of pickles from Malaysia. The miniscule seeds escaped easily, and she chewed more than she saved for the cake. Cardamon is the breath freshener of Asians, and it always reminds me of her hoard of cardamom seeds that she often chewed.
